I’m originally from Louisiana where it is all about food, food, food!! So, I love to cook, but I’m all about quick, easy and healthy dinner recipes. I don’t like making anything that is too complicated or has a long list of ingredients or directions. One of my go-to dishes for my son and husband is fresh basil pesto pasta. My mother has been making it for years. It takes no time at all and is simply delicious. Enjoy!

4 garlic cloves (We like a lot of garlic!)
One medium basil plant (Cut off all the leaves)
1/4 cup pine nuts
1/4 cup olive oil
2 tablespoons parmesan cheese (Or more if you like)
One box of pasta (We usually use a low glycemic or gluten free pasta)
Salt to taste if you like
While the pasta is boiling, combine the rest of the ingredients in your food processor. Grind until the ingredients take on a sauce-like texture. Let sit while the pasta finishes boiling. I hope you enjoy this fresh, tasty and easy meal!
